What's for Dinner: Brian's Beans


1 - 1.5 cups of black beans or "turtle" beans
1 - 1.5 cups white long grain rice
1 - 2 green bell peppers
1 large onion
1 - 5 cloves of garlic
2 bay leaves
3 tbsp olive oil
S + P


- Soak black beans overnight (at least 10 hours but not more than 13)
- Drain, rinse and put in water (couple inches above) in a pot
- Over medium heat w/ salt, come to boil then cover, stirring occasionally
- Cook until all are tender (add water as you go)
- While they're cooking, sauté onions, garlic, S+P, peppers
- When done, add vegetables into beans (leave water in, about an inch above bean line)
- Add uncooked rice and bay leaves
- Cover, cook for 1/2 hour over medium-low heat until rice is absorbed and tender
- When done, add 2 tbs of olive oil and stir -put into fridge to cool

Makes dinner for a week. Seriously.
Don't eat the bay leaves.
